Colombia, El Silencio Anaerobic
El Silencio is a small farm in Colombia's highlands, run by Robinson Rivera and his neighbors. Robinson founded the Asosciacion de Caficultores del Centro del Cauca por la Paz (ACC).
ACC has 77 members, each with an average of 1.5 hectares of land at altitudes between 1,700 and 2,100 meters. The association aims to reduce poverty and social conflicts by providing members with commercial strategies and innovative crop technology, including a certified staff Q grader and a Quality Control lab.
This coffee lot is comprised of 100% Castillo, a disease-resistant hybrid known for its excellent cup quality. The anaerobic and natural fermentation process gives the coffee vibrant berry flavors with a sweet citrus note.
